Ingredients

Seafood and Eggs

  • 1/2 tablespoon vegetable oil
  • 1 lb. tiger prawns, peeled and deveined (approximately 10 pieces)
  • 2 eggs, beaten

Vegetables

  • 1/2 cup carrots, diced
  • 1/2 cup frozen green peas
  • 1/2 cup frozen sweet corn
  • 1/2 tablespoon green onions (approximately 1 full stem), chopped

Base and Sauces

  • 3 cups freshly cooked white rice (can use leftover rice)
  • 2 teaspoons satay sauce (or satay paste)
  • 1/2 tablespoon sesame oil
  • 1 teaspoon salt
  • 2 teaspoons maggi sauce

Toppings (Optional)

  • 1 teaspoon roasted white sesame seeds
  • 2 teaspoons masago caviar


Instructions

  1. Cook the Prawns: Heat vegetable oil in a large wok or skillet over medium-high heat for one minute. Add the peeled and deveined tiger prawns. Continuously stir and flip them until both sides turn orange and they are cooked through, about 3 minutes.
  2. Scramble the Eggs: Push the cooked prawns to one side of the pan, creating space for the eggs. Pour the beaten eggs along with a pinch of chopped green onions into the empty side. Stir gently until the eggs are scrambled and cooked through, yet still tender.
  3. Add Vegetables: Add diced carrots, frozen sweet corn, and frozen green peas to the pan. Continuously stir for about a minute to cook the vegetables slightly and mix them evenly with the prawns and eggs.
  4. Incorporate the Rice: Add the freshly cooked white rice to the pan and increase the heat to high. Use high heat to achieve the best fried rice texture. If using leftover rice, add up to 1/4 cup water to moisten it slightly. Continuously stir for about a minute to heat through and mix all ingredients evenly.
  5. Flavor the Rice: Add satay sauce, sesame oil, and salt to the rice mixture, stirring continuously for about 1 minute. Then add maggi sauce and the remaining chopped green onions, stirring thoroughly to combine all flavors.
  6. Garnish and Serve: Remove the pan from heat. Sprinkle roasted white sesame seeds and masago caviar over the top if using. Serve the seafood fried rice immediately while hot.

Notes

  • Using freshly cooked rice is ideal, but leftover rice works well too; add a little water to soften if needed.
  • Adjust seasoning according to taste, especially salt and sauces.
  • Masago caviar and sesame seeds are optional but add lovely texture and flavor contrast.
  • Maintain high heat when stir-frying rice to ensure the best texture and to prevent it from becoming soggy.
  • Feel free to substitute tiger prawns with other seafood such as shrimp or scallops.
