  • 135 g granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract

Salted Caramel

  • 150 g granulated sugar
  • 150 g heavy cream, room temperature
  • 60 g unsalted butter, room temperature and roughly cubed
  • 1/2 teaspoon salt
  • 20 g cocoa powder or powdered sugar for dusting


Instructions

  1. Prepare the Flour Mixture: In a medium bowl, combine the all-purpose flour, almond flour, cocoa powder, baking powder, and salt. Stir well to combine and set aside.
  2. Cream Butter and Sugars: In a large bowl, beat the softened unsalted butter with an electric hand mixer until creamy and pale. Add granulated sugar and continue to beat until fluffy. Mix in the eggs and vanilla extract until fully combined.
  3. Mix Dough: Gradually add the flour mixture to the wet ingredients, mixing until a soft dough forms. If dough becomes too thick for the mixer, switch to using a spatula to finish combining evenly.
  4. Shape and Chill Dough: Turn the dough onto plastic wrap. Press the dough together and divide it into two halves. Shape each half into a flattened disc, wrap tightly in plastic wrap, and refrigerate for at least 2 hours or overnight to firm up.
  5. Make Salted Caramel: In a small pot over medium heat, melt the granulated sugar until it liquefies and turns a light amber color, approximately 10 minutes.
