Description

A vibrant and flavorful Salmon Burrito Bowl featuring perfectly seasoned shrimp (or salmon) served over cilantro lime rice with avocado corn salsa and a dollop of sour cream, topped with fresh lime juice. This easy 30-minute recipe offers a delicious and healthy meal option combining pan-searing and air frying methods for cooking the seafood.

Ingredients

Shrimp Seasoning and Cooking

  • ½ pound shrimp (peeled and deveined)
  • 1 teaspoon brown sugar
  • ½-1 teaspoon salt
  • ½-1 teaspoon pepper
  • ½ teaspoon paprika
  • 1 tablespoon oil (for pan searing)
  • Oil spray (for air frying)

Bowl Components

  • 2 cups cilantro lime rice
  • 2 cups avocado corn salsa
  • 3 tablespoons sour cream
  • Lime (for juice and garnish)

Instructions

  1. Prepare the shrimp
Pat dry the shrimp with a paper towel. Season generously with brown sugar, salt, pepper, and paprika to ensure the shrimp is fully flavored.
  2. Cook shrimp by pan searing
Heat 1 tablespoon of oil in a skillet over medium-high heat. Once hot, add the seasoned shrimp and sear each side for about 2 minutes until the shrimp turns pink and is cooked through.
  3. Or cook shrimp by air frying
Alternatively, spray the air fryer basket with oil. Place the seasoned shrimp in the basket in a single layer and air fry at 400°F (204°C) for 6 to 8 minutes until cooked through and slightly crisp.
  4. Assemble the Salmon Burrito Bowl
Place a layer of cilantro lime rice in each bowl. Top with the cooked shrimp (or salmon if preferred), then add avocado corn salsa and a dollop of sour cream. Finish by squeezing fresh lime juice over the bowl to enhance flavors.

Notes

  • Brown sugar in the shrimp seasoning adds a subtle sweetness that balances the spices.
  • You can choose either pan searing or air frying for cooking the shrimp depending on your preferred cooking method.
  • Substitute shrimp with salmon if desired, adjusting cooking time accordingly.
  • The cilantro lime rice and avocado corn salsa can be homemade or store-bought for convenience.
  • Adding fresh lime juice at the end brightens and lifts all the flavors in the bowl.
