Description
Russian Vinaigrette Salad, also known as Vinegret, is a traditional cold vegetable salad that combines boiled beets, potatoes, carrots, and pickled elements like sauerkraut or dill pickles. Tossed with a light sunflower or olive oil and lemon juice dressing, this vibrant and hearty salad is perfect as a healthy appetizer or side dish, known for its earthy flavors and refreshing tang.
Ingredients
Vegetables
- 3-4 medium-sized potatoes
- 3-4 beets
- 3 carrots
- 1 onion
Pickled Ingredients
- 1 cup pickled sauerkraut or 3-4 dill pickles
Dressing
- Juice of one lemon
- 3-4 tablespoons sunflower or olive oil
- Salt and pepper to taste
Instructions
- Prepare the vegetables: Thoroughly wash and clean the beets, carrots, and potatoes. You may peel them now or leave the skins on to preserve nutrients before cooking.
- Cook the vegetables: Prick each vegetable a few times with a fork to help cooking. Place all vegetables in a large pot, cover with water, and bring to a boil. Continue boiling for 20-30 minutes until the vegetables are easily pierced with a fork. Remove and let them cool to room temperature.
- Peel and chop: Once cooled enough to handle, peel the vegetables as best as possible—potatoes peel easily, beets less so, and carrots might be more difficult. Chop all vegetables into fine ½ to 1-inch cubes and place them in a large mixing bowl.
- Chop the onion: Finely chop the onion and add it to the bowl with the chopped vegetables.
- Add pickled ingredients: Add sauerkraut directly if using, or finely chop the dill pickles and add them into the bowl. Mix all ingredients well.
- Make and add dressing: In a small bowl, stir together the vegetable oil, lemon juice, and salt. Pour the dressing over the salad mixture and toss thoroughly to ensure all vegetables are well coated.
- Refrigerate and serve: Let the salad rest in the refrigerator for 1.5 to 2 hours to meld flavors. Before serving, taste and adjust seasoning with additional salt or lemon juice if needed.

- Peeling the vegetables before boiling reduces cooking time slightly but may cause some nutrient loss.
- If using dill pickles, finely chop for even flavor distribution.
- The salad tastes better when allowed to chill and let flavors combine.
