Description

This creamy and flavorful Roasted Red Pepper Hummus is a delightful twist on the classic hummus, enriched with the smoky sweetness of roasted red peppers. Perfect as a healthy snack or appetizer, it combines chickpeas, tahini, garlic, and lemon juice into a smooth dip that's easy to prepare in just 15 minutes.

Ingredients

Hummus Ingredients

  • 1 (15-ounce) can chickpeas
  • 3 tablespoons lemon juice
  • 2 tablespoons tahini
  • 2 garlic cloves
  • ½ teaspoon salt
  • 7-8 ounces roasted red peppers (drained and squeezed)

For Serving

  • Extra virgin olive oil
  • Paprika

Instructions

  1. Prepare the Chickpeas: Place chickpeas in a bowl of water and rub them together to peel the skin. This optional step helps create a creamier texture for the hummus.
  2. Blend Chickpeas: Drain the chickpeas and transfer them to a food processor. Blend alone until they become powder-like, stopping occasionally to scrape down the sides.
  3. Add Flavorings: Add the lemon juice, tahini, garlic cloves, salt, and 2-3 ice cubes to the food processor. Blend for about 5 minutes until the mixture is smooth and creamy.
  4. Incorporate Roasted Red Peppers: Add the drained roasted red peppers to the food processor and process again until the hummus is creamy and well blended.
  5. Serve: Transfer the hummus to a serving bowl, drizzle with extra virgin olive oil, and sprinkle with paprika. Serve at room temperature or chilled with naan or your favorite dippers.

Notes

  • Peeling the chickpeas is optional but highly recommended for an ultra-smooth hummus texture.
  • You can use jarred roasted red peppers or roast your own for a fresher flavor.
  • Adjust garlic and lemon juice to taste according to your preference.
  • Hummus can be stored in an airtight container in the refrigerator for up to 4 days.
  • Adding ice cubes while blending helps achieve a lighter, fluffier consistency.
