Perfect as a light appetizer or a comforting bowl on a cool day, this soup is quick to prepare and beautifully garnished with fresh red grapes for a burst of color and flavor.
Ingredients
Main Ingredients
- 2 lbs fresh asparagus, ends trimmed
- 2 tablespoons olive oil
- 3 cups chicken stock (adjust for preferred soup thickness)
- 2 tablespoons cream
- Zest of 1/2 lemon
- Some red grapes, thinly sliced
- Salt and freshly ground black pepper, to taste
Instructions
- Preheat Oven: Set your oven to 395°F (200°C) to prepare for roasting the asparagus.
- Prepare Asparagus: Arrange the asparagus spears on a parchment-lined baking sheet in a single layer. Drizzle with olive oil and season generously with salt and pepper. Toss gently to coat all spears evenly.
- Roast Asparagus: Bake the asparagus for 5-10 minutes, turning once or twice with tongs to ensure even roasting. The spears should be tender but retain their shape. Remove from oven and allow to cool for 2 minutes.
- Blend Soup: Roughly chop the roasted asparagus, then add to a blender along with the chicken stock. Blend until smooth. For an extra silky texture, strain the mixture through a fine mesh sieve.
- Heat Soup: Pour the pureed asparagus soup into a medium saucepan. Stir in the lemon zest and heat gently over low heat. Season with additional salt and pepper to taste.
- Serve and Garnish: Ladle the warm soup into four bowls. Add a drizzle of cream on top and garnish with the thinly sliced red grapes for a fresh and colorful finish.
Notes
- Adjust the amount of chicken stock to achieve your preferred soup consistency.
- For a vegetarian version, substitute chicken stock with vegetable stock.
- Straining the soup through a fine mesh sieve ensures an ultra-smooth texture.
- Red grapes add a nice contrast in sweetness and texture but can be omitted or replaced with toasted nuts if preferred.
- Roasting the asparagus enhances its natural sweetness and adds depth to the soup's flavor.
- Be careful not to over-roast the asparagus to avoid a mushy texture.
