Description

This decadent Red Velvet Crème Brûlée combines the luxurious creaminess of classic crème brûlée with the rich flavors and striking color of red velvet. Ingredients

Custard

  • 6 egg yolks (room temperature)
  • 1/2 cup granulated sugar
  • 1/4 cup unsweetened cocoa powder (sifted)
  • 2 cups heavy cream
  • 1 teaspoon vanilla extract
  • 1/8 teaspoon red gel food coloring
  • 1/4 teaspoon salt

  • 1/3 cup fine sugar (for caramelizing)


Instructions

  1. Preheat: Preheat the oven to 325 degrees F (163 degrees C). Place six 7 to 8-ounce ramekins in a roasting pan.
  2. Whisk Egg Mixture: In a large bowl, whisk together the egg yolks, 1/2 cup granulated sugar, and salt until well combined, scraping down the sides and bottom of the bowl to ensure even mixing.
  3. Add Cocoa Powder: Whisk in the sifted cocoa powder thoroughly, ensuring there are no lumps and the mixture is completely combined.
  4. Add Color: Incorporate the red gel food coloring into the egg mixture, whisking until the color is evenly distributed.
  5. Simmer Cream: In a medium saucepan, heat the heavy cream until hot and just simmering; do not let it boil. Remove from heat immediately.
  6. Combine Cream with Egg Mixture: With the mixer on low speed, slowly add the hot cream into the egg mixture in small increments to prevent curdling. Once all the cream is incorporated, add the vanilla extract and additional gel food coloring if a deeper color is desired.
