Description

Ingredients

Shrimp and Marinade

Instructions

  1. Marinate Shrimp: In a medium bowl, combine the chopped raw shrimp with 1/2 cup of fresh lemon juice and 1/2 cup of fresh lime juice. Cover the bowl and refrigerate for at least 4 hours, or up to overnight, stirring the mixture 2 or 3 times during the marination to ensure even curing of the shrimp.
  2. Prepare Dressing: In a small bowl, whisk together the extra virgin olive oil, granulated sugar, kosher salt, paprika, lemon zest, lime zest, and the remaining 1 tablespoon each of lemon juice and lime juice until well combined and slightly emulsified.
  3. Combine and Serve: Just before serving, drain the excess liquid from the shrimp mixture. Add the finely chopped tomato, minced jalapeño, chopped cilantro, peeled cucumber, green onion, and the prepared oil dressing to the shrimp. Toss gently to combine all ingredients evenly.
