Quinoa Patties

  • 1 cup cooked quinoa
  • 2 eggs
  • ½ teaspoon oregano
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ cup mozzarella cheese
  • ¼ cup red onion, finely minced
  • 1 cup panko breadcrumbs (gluten-free if desired)
  • 4 tablespoons avocado oil, divided


Instructions

  1. Prepare the mixture: In a medium bowl, combine the cooked quinoa, eggs, oregano, garlic powder, salt, and black pepper. Stir in the mozzarella cheese and finely minced red onion until evenly distributed.
  2. Add breadcrumbs and form patties: Stir in the panko breadcrumbs and let the mixture sit for a few minutes to allow the breadcrumbs to absorb moisture. Wet your hands with water and use a ¼ cup measuring cup to scoop the mixture, then shape into patties. This recipe should make about 10 patties.
  3. Cook the patties: Heat 2 tablespoons of avocado oil in a large non-stick skillet over medium heat. Place half of the patties in the skillet and cook until golden brown, about 3-4 minutes per side. Remove and set aside. Repeat the process with the remaining oil and patties until all are cooked through and crispy on the outside.
