Ingredients
Dry Ingredients
- 450 g Dried Pasta
- 90 g Parmesan (plus extra for sprinkling)
- Sea Salt and Black Pepper (to taste)
Sauce Ingredients
- 90 g Roasted Garlic (mashed)
- 1 tbsp Olive Oil
- 1 Red Chilli (finely chopped and deseeded)
- 300 ml Double Cream
- 1 tbsp Fresh Parsley (chopped finely)
Instructions
- Cook Pasta: Bring a large pot of salted water to a boil. Add the dried pasta and cook according to package instructions until al dente. Drain and set aside.
- Sauté Chili: While the pasta is cooking, heat olive oil in a large pan over medium heat. Add the finely chopped and deseeded red chili, sautéing for 1-2 minutes until softened and fragrant.
- Add Roasted Garlic: Stir in the mashed roasted garlic to the chili in the pan, combining thoroughly to blend the flavors.
- Create Cream Sauce: Pour in the double cream, stirring gently. Bring the mixture to a simmer and cook for 3-4 minutes until the sauce begins to thicken slightly.
- Add Parmesan: Stir in the grated Parmesan cheese until it melts completely into the sauce, forming a creamy texture. Season with sea salt and black pepper to taste.
- Toss Pasta with Sauce: Add the cooked pasta directly into the pan with the sauce. Toss well to coat all the pasta evenly. Stir in the fresh chopped parsley.
- Serve: Plate the pasta and garnish with extra Parmesan cheese and fresh parsley as desired. Serve immediately for best flavor and texture.
Notes
- For a milder heat, reduce the amount of red chili or omit entirely.
- Use freshly grated Parmesan for better melting and flavor.
- You can substitute double cream with heavy cream or half-and-half for a lighter sauce, though thickness may vary.
- Roasted garlic adds sweetness and depth; if unavailable, roast fresh garlic cloves in the oven until soft before mashing.
- To make it vegetarian, ensure the Parmesan cheese is suitable (contains no animal rennet) or substitute with a vegetarian-friendly cheese.
