  • 1 15-ounce can black beans, undrained
  • 3 tablespoons lime juice
  • 2 tablespoons water
  • 8 ounces Mexican chorizo
  • 2 cups shredded Oaxaca or Monterey Jack cheese
  • 1-2 jalapeños (optional, sliced)

Instructions

  1. Preheat Oven: Preheat your oven to 425 degrees Fahrenheit to prepare for baking the pizza.
  2. Prepare Pastry: Roll out the thawed puff pastry sheets on a floured surface until they form a 12x12 inch square. Cut each sheet into four 6-inch squares. Place these squares on parchment-lined baking sheets. Using a butter knife, score a 1/4-inch frame around each pastry square without cutting all the way through. Brush the entire surface with beaten egg and set aside.
  3. Cook Aromatics: Heat olive oil in a skillet over medium heat. Add chopped onion and minced garlic, cooking for about 3 minutes until they become tender and fragrant.
  4. Prepare Black Bean Spread: Remove skillet from heat and stir in the undrained black beans, lime juice, and water. Transfer this mixture to a food processor or blender and pulse until the mixture is smooth and spreadable.
