Ingredients
Cheese Ball
- 16 ounces cream cheese (at room temperature)
- 3 ½ cups sharp cheddar cheese (shredded, at room temperature)
- 1 tablespoon ranch seasoning mix
- ¼ cup green onions (chopped)
Coating
- 1 ½ cups crushed pecans
- 1 tablespoon curry powder
- 1 tablespoon sugar
Garnish
- 1 bell pepper stem (for garnish)
Instructions
- Combine ingredients: In a large bowl, mix the cream cheese, sharp cheddar cheese, ranch seasoning mix, and chopped green onions until the mixture is smooth and well blended.
- Shape the cheese ball: Transfer the cheese mixture onto a sheet of plastic wrap. Wrap the mixture tightly and shape it into a ball with your hands.
- Create pumpkin ridges: Place 3–4 thick rubber bands around the wrapped cheese ball to form ridges, giving it the look of a pumpkin.
- Chill the cheese ball: Refrigerate the shaped cheese ball for at least 4 hours or overnight to firm up and develop flavors. It can be prepared several days ahead and stored in the fridge.
- Prepare the coating: In a shallow dish, combine the crushed pecans, curry powder, and sugar thoroughly.
- Coat the cheese ball: Remove the cheese ball from the plastic wrap and rubber bands. Roll it in the pecan mixture until it’s fully coated on all sides.
- Garnish and serve: Top the coated cheese ball with a bell pepper stem to resemble a pumpkin stem. Serve with crackers, pretzels, or fresh vegetables for dipping.
Notes
- The cheese ball can be made several days in advance and stored in the refrigerator, well wrapped.
- For best results, use room temperature cream cheese and shredded cheddar to allow easy mixing.
- The rubber bands create pumpkin-like ridges—ensure they are thick and sturdy.
- The bell pepper stem adds a festive touch but can be omitted if unavailable.
- Serve with an assortment of dippers such as crackers, pretzels, celery sticks, or sliced cucumbers.
