Ingredients
White Chocolate Graham Crackers
- 1 1/2 cups white candy melts
- 8 sheets graham crackers
- 1 teaspoon ground cinnamon (for garnish, optional)
Pumpkin Cheesecake Dip
- 8 ounces cream cheese, softened
- 8 ounces Cool Whip, softened
- 1 1/2 cups powdered sugar
- 1 cup pumpkin puree
- 1 tablespoon pumpkin pie spice
- 1 teaspoon vanilla extract
- 1/8 teaspoon ground cinnamon (for garnish, optional)
Instructions
- Prepare White Chocolate Graham Crackers: Line a large baking sheet with parchment paper and set aside. Place white chocolate candy melts into a microwave-safe bowl and heat them following the package instructions, stirring every 20-30 seconds to ensure smooth melting.
- Dip Graham Crackers: Holding one end of a graham cracker, dip the bottom into the melted white chocolate. Use a spatula to gently spread the chocolate along the sides to cover the cracker evenly. Lift it out and smooth the coating with the spatula to remove any excess chocolate. Shake the graham cracker lightly to even out the coating and place it on the parchment paper to dry.
- Garnish Crackers: While still wet, sprinkle the dipped graham crackers with ground cinnamon if desired. Repeat the dipping process with remaining graham crackers. Let them dry at least 30 minutes before serving to set the coating properly.
- Make Pumpkin Cheesecake Dip: In a stand mixer or using a hand mixer and a large bowl, beat the softened cream cheese and Cool Whip together on medium speed until smooth and free of lumps, about 2 minutes.
- Combine Ingredients: Continue mixing on medium speed and add powdered sugar, pumpkin puree, pumpkin pie spice, and vanilla extract. Blend all ingredients together until homogenous and creamy, approximately 3 to 5 minutes.
- Chill and Serve: Transfer the dip to a serving bowl and sprinkle the top with a pinch of ground cinnamon if desired. For a firmer texture, refrigerate the dip between 30 minutes to 1 hour before serving.
- Serving Suggestion: Serve the pumpkin cheesecake dip alongside the white chocolate-dipped graham crackers or your favorite cookies for dipping and enjoy.
Notes
- The white chocolate coating on the graham crackers must be fully set before serving to avoid messiness.
- For a richer dip, consider using full-fat cream cheese and Cool Whip.
- Adjust the amount of pumpkin pie spice depending on your preferred spice intensity.
- The dip can be prepared a day in advance and stored in the refrigerator, covered, to enhance the flavors.
- If you prefer, substitute Cool Whip with homemade whipped cream for a fresher taste.
