Description

These Pull Apart Cheeseburger Sliders are a deliciously cheesy, flavorful twist on classic sliders, combining ground meat simmered with Korean chili paste and Worcestershire sauce, layered with sharp cheddar and spicy cheeses, pickles, and a garlic herb butter topping. Baked to melty perfection, they are perfect for gatherings or casual dinners.


Ingredients

Special Sauce

  • 1/2 cup mayo
  • 1/3 cup sweet Thai chili sauce
  • 2 tablespoons tamari or soy sauce
  • 1 tablespoon ketchup
  • 1 clove garlic, grated

Meat and Seasonings

  • 1 pound ground beef, chicken, or turkey
  • 2-3 tablespoons Gochujang (Korean chili paste)
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • Salt and black pepper, to taste

Sliders and Toppings

  • 1 package (12 count) dinner rolls, halved lengthwise
  • 4-6 slices sharp cheddar cheese
  • 1 cup shredded spicy cheddar or pepper jack cheese
  • 1/4 cup dill pickles and/or pepperoncini, sliced

Garlic Herb Butter

  • 3 tablespoons salted butter, at room temperature
  • 4-6 cloves garlic, chopped
  • 1 tablespoon chopped fresh basil or parsley
  • 2 tablespoons grated parmesan cheese
  • 2 tablespoons sesame seeds


Instructions

  1. Make the Special Sauce: In a bowl, combine mayo, sweet Thai chili sauce, tamari or soy sauce, ketchup, and grated garlic. Stir well until smooth and set aside to let the flavors meld.
  2. Cook the Meat: Preheat the oven to 400°F (200°C). Heat a skillet over medium heat, then add the ground meat. Cook until browned all over, breaking it up with a spatula. Stir in the Gochujang, Worcestershire sauce, onion powder, garlic powder, salt, and black pepper. Cook for another 2-3 minutes, then remove from heat.
  3. Assemble the Sliders: Spread the bottom halves of the dinner rolls evenly on a baking sheet lined with parchment paper. Layer slices of sharp cheddar cheese over the bottoms. Spoon the seasoned meat mixture evenly over the cheese. Drizzle about one-third cup of the special sauce over the meat, then sprinkle the shredded spicy cheddar or pepper jack cheese on top. Arrange slices of dill pickles and/or pepperoncini over the cheese.
  4. Prepare Garlic Herb Butter: In a small bowl, mix the softened butter with chopped garlic, fresh basil or parsley, and grated parmesan cheese until well combined. Spread this butter mixture evenly over the top halves of the dinner rolls. Sprinkle the sesame seeds over the buttered tops.
  5. Bake the Sliders: Cover the assembled sliders with aluminum foil and bake in the preheated oven for 10-15 minutes. Remove the foil and continue baking for an additional 10-15 minutes until the cheese is melted and bubbly, and the rolls are golden on top.
  6. Serve: Brush the sliders with any remaining garlic herb butter, add more special sauce on the side if desired, and serve immediately while warm and gooey.
