Fruit Topping
- 3-4 large plums, cut into 6 pieces each
- 1/4 cup (50 grams) turbinado sugar
- 4 tablespoons (56 grams) unsalted butter, melted
Lemon Glaze
- 1 cup (120 grams) powdered sugar
- 2-3 tablespoons freshly squeezed lemon juice
Instructions
- Prepare the Pan: Lightly butter and flour a 13 x 9-inch baking pan. Line it with parchment paper so it overhangs the long sides, which helps with easy cake removal.
- Activate the Yeast: Combine the milk, dark brown sugar, and 10 tablespoons of butter in a non-reactive saucepan and heat to 110°F. The butter will be nearly melted. Add the active dry yeast, gently stir, and let stand for 10 minutes until the yeast bubbles and expands, indicating it is active.
- Mix Dry Ingredients: In a medium bowl, whisk together the flour, kosher salt, and ground cinnamon thoroughly to distribute the spices evenly throughout the flour.
- Combine Wet and Dry: Lightly whisk the eggs to break them up. Pour the eggs and the milk-yeast mixture over the flour mixture. Gently stir with a wooden spoon or silicone spatula until all wet ingredients are incorporated and no dry flour remains visible, forming the batter.
