Description

A refreshing and elegant Plum Bellini Cocktail featuring freshly pureed ripe plums combined with chilled Prosecco, perfect for a summer brunch or a festive gathering. Ingredients

Plum Puree

  • 4 medium plums (about 1 pound)

Cocktail

  • 1 bottle (750ml) Prosecco, chilled
  • Fresh mint for serving (optional)
  • Plum slices for garnish (optional)


Instructions

  1. Prepare Plums: Score a shallow “x” on each plum with a knife. Bring a medium pot of water to a boil, then place the plums in the boiling water for 20 seconds to loosen the skins. Remove plums immediately and cool in a bowl. Peel and discard the skins, extract as much juice and color from them as possible. Remove flesh from the pit and discard pits and skins.
  2. Puree the Plums: Place the plum flesh in a blender and puree on high speed until completely smooth. Transfer the puree to a container and chill in the refrigerator for up to 4 hours or until ready to serve.
  3. Assemble the Bellini: Scoop about 3 tablespoons of the chilled plum puree into the bottom of a champagne flute. Slowly top with chilled Prosecco. Once the initial fizz settles, gently stir the mixture to combine.
  4. Garnish and Serve: Garnish with a slice of plum or a sprig of fresh mint, if desired. Serve immediately to enjoy the fresh, fruity flavors.
