Description

Delightfully crisp and lightly sweet, these traditional Pizzelle Cookies are made with simple ingredients and baked quickly in a pizzelle iron. Perfect for a festive treat or a light dessert, they’re flavored with vanilla and dusted with powdered sugar for a classic Italian cookie experience.

Ingredients

Cookies

  • 1 large egg
  • 1 large egg white
  • 1/3 cup sugar
  • 2 tablespoons melted salted butter
  • 2 tablespoons skim milk or milk of your choice
  • 1 1/2 teaspoons vanilla extract
  • 3/4 cup all-purpose flour or gluten-free flour mix
  • 1 teaspoon baking powder
  • Cooking spray

Topping

  • 1 tablespoon powdered sugar

Instructions

  1. Beat eggs and sugar: In a large bowl, beat the whole egg, egg white, and sugar together until the mixture is thickened, which will create a light and airy base for your pizzelle batter.
  2. Add wet ingredients: Stir in the melted salted butter, milk, and vanilla extract to the egg mixture, combining everything thoroughly for a smooth batter.
  3. Incorporate dry ingredients: Sift together the all-purpose flour and baking powder, then blend this dry mixture into the wet ingredients until the batter is smooth and free of lumps.
  4. Preheat the pizzelle iron: Turn on your pizzelle iron and allow it to heat fully; lightly spray the cooking surfaces with oil to prevent sticking.
  5. Cook the cookies: Drop about one level tablespoon of batter onto each circle on the heated iron; depending on your iron’s size and heat, you may need to adjust the amount of batter. Close the iron and cook for about 45 to 50 seconds, or until steam ceases to escape from the iron, indicating the cookies are baked through.
  6. Remove and cool: Carefully remove the cooked pizzelle cookies from the iron and transfer them to a cooling rack to crisp up completely.
  7. Repeat the process: Spray the iron lightly again and continue baking the remaining batter until all cookies are made.
  8. Store properly: Once fully cooled, store the pizzelle cookies in an airtight container to maintain their crisp texture.
  9. Serve: Just before serving, dust the cookies with powdered sugar for an elegant finish and added sweetness.

Notes

  • The amount of batter and baking time may vary depending on pizzelle iron make and model — experiment for the best results.
  • For a dairy-free version, use a non-dairy milk and substitute butter with coconut oil or a vegan butter alternative.
  • To add extra flavor, try incorporating anise extract in place of vanilla or sprinkle cinnamon sugar on the cookies while warm.
  • Pizzelle can be shaped into cones or bowls immediately after baking if you want to create decorative treats.
  • Store pizzelle cookies in an airtight container at room temperature for up to 1 week to keep them crisp.
