Description

This Pistachio Cake is a moist and flavorful dessert combining the rich taste of pistachio pudding with a classic yellow cake base. Enhanced with almond extract and a touch of green food coloring, this cake is perfect for festive occasions or any time you crave a nutty, delicious treat.

Ingredients

Dry Ingredients

  • 1 (18.25 oz) package yellow cake mix
  • 1 (3.4 oz) package instant pistachio pudding mix

Wet Ingredients

  • 4 large eggs
  • 1 1/2 cups water
  • 1/4 cup vegetable oil
  • 1/2 teaspoon almond extract
  • 7 drops green food coloring

Instructions

  1. Preheat Oven and Prepare Pan: Preheat your oven to 350 degrees F (175 degrees C). Grease and flour a 10-inch tube pan to ensure the cake will release easily after baking.
  2. Mix Dry Ingredients: In a large mixing bowl, combine the yellow cake mix and instant pistachio pudding mix thoroughly, blending the flavors evenly.
  3. Add Wet Ingredients: Create a well in the center of the dry mixture and add the eggs, water, vegetable oil, almond extract, and green food coloring.
  4. Beat the Batter: Using an electric mixer, beat the mixture on medium speed for about 2 minutes until the batter is smooth and everything is well incorporated.
  5. Pour Batter into Pan: Transfer the batter into the prepared tube pan, spreading it evenly.
  6. Bake the Cake: Place the pan in the preheated oven and bake for 50 to 55 minutes. Check doneness by inserting a toothpick into the center; it should come out clean when the cake is ready.
  7. Cool the Cake: Let the cake cool in the pan for 15 minutes to set slightly, then carefully remove it from the pan and transfer to a wire rack to cool completely.
  8. Serve: Once cooled, ice the cake with your favorite frosting or lightly dust with confectioners' sugar before serving.

Notes

  • Make sure to grease and flour the pan well to prevent sticking.
  • The green food coloring is optional and can be adjusted for desired color intensity.
  • This cake pairs nicely with cream cheese frosting or a simple vanilla glaze.
  • Store leftover cake tightly covered at room temperature for up to 3 days or refrigerate for longer freshness.
  • For a nutty crunch, garnish with chopped pistachios on top of the frosting.
