Crust and Crumb Topping

  • 1 1/2 cups all-purpose flour

  • 1/4 cup brown sugar (light or dark)
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted and cooled

Filling

  • 1 can (20 oz.) crushed pineapple in 100% juice
  • 2 tablespoons granulated white sugar
  • 2 tablespoons brown sugar (light or dark)
  • 1/4 teaspoon cinnamon
  • 1 teaspoon vanilla extract (or coconut extract)
  • 2 tablespoons cornstarch


Instructions

  1. Preheat the oven: Set your oven to 375 degrees F to prepare for baking the bars.
  2. Prepare the pan: Line an 8x8 inch square baking pan with parchment paper and set aside to prevent sticking.
  3. Make the crust and crumb topping: In a medium bowl, mix together the all-purpose flour, shredded coconut, white sugar, brown sugar, baking soda, baking powder, and salt until evenly combined.
  4. Add melted butter: Pour the cooled melted butter into the dry ingredients and stir using a fork until the mixture forms coarse crumbs.
  5. Press crust: Reserve one cup of the crumb mixture for the topping later, then press the remaining crumbs firmly into the bottom of the prepared pan to form the crust layer.
