Description

This Indian Pilau Rice recipe is a fragrant, spiced basmati rice dish cooked with aromatic whole spices and turmeric. Perfect as a flavorful side dish to accompany curries or grilled meats, the rice is gently simmered in chicken stock for a tender and fluffy texture infused with warm, savory notes.

Ingredients

Main Ingredients

  • 3 tbsp Butter
  • 250 g Basmati Rice
  • 6 Cardamom Pods
  • 1 Cinnamon Stick
  • 1 Bay Leaf
  • 4 Whole Cloves
  • 1 tsp Ground Turmeric
  • 500 ml Chicken Stock

Instructions

  1. Soak and Rinse Rice: Place the basmati rice in a bowl and cover with warm water. Let it soak for 10 minutes, then rinse several times until the water runs clear. Drain the rice and set aside.
  2. Melt Butter: In a pan, melt 3 tablespoons of butter over medium heat to prepare for sautéing the spices.
  3. Add Spices: Add the cardamom pods, cinnamon stick, bay leaf, cloves, and ground turmeric to the melted butter. Cook until the spices become aromatic, releasing their flavors into the butter.
  4. Incorporate Rice: Add the drained rice to the pan and stir thoroughly to coat the grains evenly with the butter and spices.
  5. Add Stock and Boil: Pour in 500 ml of chicken stock and bring the mixture to a boil to start cooking the rice.
  6. Simmer with Lid: Cover the pan with a tight-fitting lid and reduce heat to a gentle simmer for 5 minutes, allowing the rice to absorb the stock and flavors.
  7. Rest the Rice: Turn off the heat and leave the pan covered for an additional 10 minutes. This resting period lets the rice finish steaming and ensures fluffy grains.

Notes

  • Rinsing the rice until the water runs clear is essential to remove excess starch for fluffy, separate grains.
  • Using a tight-fitting lid helps trap steam and ensures even cooking of the rice.
  • For a vegetarian version, substitute chicken stock with vegetable stock.
  • Adjust the whole spices quantity to taste, especially if you prefer milder or stronger aromas.
  • Serve the pilau rice alongside curry, grilled meats, or vegetable dishes for a complete meal.
