Description

Pickled Shrimp is a flavorful and tangy seafood dish where cooked shrimp are marinated in a zesty blend of olive oil, red wine vinegar, tomato paste, and aromatic spices. This no-cook, easy-to-prepare appetizer offers a perfect balance of spicy, tangy, and savory notes, making it ideal for parties, light meals, or as a tasty addition to salads.

Ingredients

Marinade Ingredients

  • 1/3 cup olive oil
  • 1/4 cup red wine vinegar
  • 1 tablespoon tomato paste
  • 1 1/2 teaspoons sugar
  • 1 1/2 teaspoons celery seed
  • 1 garlic clove, minced
  • 1/2 teaspoon coarsely ground pepper
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground mustard
  • 1/8 teaspoon crushed red pepper flakes
  • 1/8 teaspoon hot pepper sauce

Shrimp and Aromatics

  • 1 pound cooked large shrimp, peeled and deveined
  • 1 small onion, thinly sliced and separated into rings
  • 2 bay leaves

Instructions

  1. Prepare the marinade: In a large resealable plastic bag, combine the olive oil, red wine vinegar, tomato paste, sugar, celery seed, minced garlic, coarsely ground pepper, salt, ground mustard, crushed red pepper flakes, and hot pepper sauce. Mix thoroughly to blend all the flavors.
  2. Add shrimp and aromatics: Add the cooked, peeled, and deveined shrimp along with the thinly sliced onion rings and bay leaves into the bag with the marinade. Seal the bag securely.
  3. Marinate the shrimp: Gently turn and massage the bag to ensure all shrimp and onions are evenly coated with the marinade. Refrigerate the sealed bag for up to 24 hours to allow the shrimp to absorb the flavors fully.
  4. Drain before serving: When ready to serve, drain the shrimp and onions, discarding the marinade and bay leaves. Serve chilled or at room temperature as a flavorful appetizer or addition to salads.

Notes

  • For best flavor, marinate the shrimp for at least 4 hours.
  • Use fresh cooked shrimp or previously cooked shrimp that has been chilled.
  • Store the marinating shrimp bag in a larger container to prevent leaks in the refrigerator.
  • This recipe is quick and requires no additional cooking after marinating.
  • Adjust the hot pepper sauce and red pepper flakes to your preferred spice level.
