Description

A delicious and easy-to-make Pesto Turkey Sandwich featuring crispy broiled ciabatta bread, creamy mayonnaise, flavorful pesto, tender turkey slices, melted provolone cheese, and fresh shredded romaine lettuce. Perfect for a quick lunch or light dinner prepared in just 20 minutes.

Ingredients

Sandwich Ingredients

  • 1 loaf ciabatta piccolo bread (275g)
  • 2 to 4 tablespoons mayonnaise
  • 2 to 4 tablespoons pesto
  • 8 slices turkey
  • 4 slices provolone cheese
  • 1 cup shredded romaine lettuce

Instructions

  1. Prepare the Bread: Slice the ciabatta loaf in half lengthwise. Generously spread mayonnaise on the cut side of both halves. Place the bread on a sheet pan and broil in the oven for about 5 minutes or until the bread is golden brown and crispy to your liking.
  2. Add Pesto and Turkey: Remove the bread from the oven and generously spread pesto over the mayonnaise layer. Then, arrange two layers of sliced turkey evenly over the pesto.
  3. Layer Cheese and Melt: Place a single layer of provolone cheese slices on top of the turkey. Return the sandwich bottoms to the oven and broil for about 1 minute or until the cheese is melted and bubbly.
  4. Add Lettuce and Top: Remove the sandwich from the oven and top with shredded romaine lettuce. Then, place the top half of the ciabatta bread over the lettuce to complete the sandwich.
  5. Slice and Serve: Press down gently if desired, then slice the sandwich into halves or thirds according to your preference. Serve immediately while warm and enjoy!

Notes

  • Adjust the amount of mayonnaise and pesto according to your taste preference.
  • Broiling times can vary depending on your oven; keep a close eye to avoid burning the bread or cheese.
  • For added crunch, you can toast the bread a bit longer before adding the ingredients.
  • If you prefer, substitute turkey with chicken breast or ham.
  • This sandwich is best eaten fresh to retain the crispiness of the bread and freshness of the lettuce.
