Ingredients

Oysters and Topping

  • 12 oysters
  • 3 garlic cloves, minced
  • 1/4 cup canola oil (60 ml)
  • 1/2 cup bread crumbs (125 ml)
  • 1/2 cup grated Parmesan cheese (125 ml)
  • 3 large egg yolks
  • 2 tablespoons lemon juice
  • 1/4 teaspoon cayenne pepper
  • 1/3 cup butter, melted (75 ml)

Mornay Sauce

  • 1/4 cup butter (60 ml)
  • 1/4 cup flour (60 ml)
  • 2 cups warm milk (500 ml)
  • 1 teaspoon ground cloves
  • Salt and pepper to taste
  • 1/4 cup whipping cream (60 ml)
  • 1 cup grated Emmental cheese (250 ml)


Instructions

  1. Prepare Oysters: Preheat your oven to 375°F (190°C). Clean the oysters by scrubbing them and rinsing under cold running water. Carefully open each oyster using an oyster knife, removing the top shell and cleaning the flesh from any grit. Remove the oyster meat intact and keep the bottom shells for baking.
  2. Sauté Garlic: In a sauté pan on medium-low heat, cook the minced garlic in canola oil for about one minute until soft and fragrant. Remove from heat and set aside.
  3. Prepare Oysters for Baking: Arrange the empty oyster shells on a baking tray. In a bowl, mix the sautéed garlic, bread crumbs, 1/4 cup Parmesan cheese, egg yolks, lemon juice, cayenne pepper, and melted butter until combined. Spoon this breadcrumb mixture evenly into each oyster shell. Place the reserved oyster meat on top of the mixture and sprinkle with the remaining Parmesan cheese.
  4. Bake Oysters: Bake in the preheated oven for 6-8 minutes, or until the topping turns golden brown and slightly crispy.
  5. Make Mornay Sauce: While oysters bake, melt butter in a large saucepan over medium-high heat. Whisk in flour continuously to create a roux and cook until golden brown, about one minute.
