Streusel Topping

  • 1/2 cup (60g) all purpose flour

  • 1/8 tsp salt
  • 1/3 cup (60g) light brown sugar, packed
  • 1/4 cup (25g) chopped walnuts
  • 1/4 cup (57g) unsalted butter, melted

Cake Batter

  • 1/2 cup (113g) unsalted butter, room temperature
  • 3/4 cup (150g) granulated sugar
  • 1/4 cup (45g) light brown sugar, packed
  • 2 large eggs
  • 3/4 cup milk
  • 2 tsp vanilla extract
  • 2 cups (240g) all purpose flour
  • 1 tsp ground cinnamon
  • 1/2 tsp ground allspice
  • 1/2 tsp ground nutmeg
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup (50g) chopped walnuts
  • 250g (9oz) finely chopped pears, cored but unpeeled (about 2 medium pears)


Instructions

  1. Prepare Pan and Oven: Line or spray an 8x8 inch baking pan and preheat your oven to 350℉ (175℃).
  2. Mix Cream Cheese Layer: In a small bowl, combine the cream cheese with 1/4 cup granulated sugar. Beat with a hand mixer or spoon until smooth and creamy. Set aside.
  3. Prepare Streusel Topping: In a medium bowl, mix flour, cinnamon, salt, light brown sugar, and chopped walnuts. Stir in the melted butter until the mixture becomes clumpy. Set aside.
  4. Cream Butter and Sugars: Using a stand mixer or hand mixer, beat the room temperature butter with granulated sugar and light brown sugar on medium speed for about 3 minutes, until fluffy and light.
  5. Add Eggs: Add eggs one at a time, fully incorporating each before adding the next.
  6. Mix Milk and Vanilla: Pour in milk and vanilla extract and mix until well combined, scraping down the sides and bottom of the bowl as needed.
  7. Combine Dry Ingredients: In a separate bowl or directly, add flour, cinnamon, allspice, nutmeg, baking powder, baking soda, and salt to the batter on low speed until just combined.
