  • 1 tablespoon butter or coconut oil
  • 2 cups Old Fashioned rolled oats (do not use instant oats or steel cut oats)
  • 1/4 teaspoon kosher salt
  • 1 teaspoon cinnamon
  • 1 cup water
  • 1 cup milk, oat milk or almond milk (or additional water)

Optional Sweet Variation

  • 2 ripe bananas, mashed (optional)

Toppings

  • 2 to 3 tablespoons peanut butter
  • Other toppings as desired: small drizzle honey or maple syrup, berry jam, fruit, etc.


Instructions

  1. Toast the oats: Melt the butter or coconut oil in a saucepan over medium heat. Add the rolled oats and toast them for about 2 to 3 minutes, stirring frequently until they become fragrant.
  2. Add spices and liquids: Sprinkle in the kosher salt and cinnamon. Reduce the heat to low, then slowly pour in the water and milk while stirring constantly. If using, add the mashed bananas at this point.
  3. Cook the oatmeal: Cover the saucepan and let the mixture simmer for 5 minutes until the oats are tender but still maintain a chewy texture.
  4. Finish and serve: Remove the pot from heat. For a creamier oatmeal, stir in an additional 1/2 cup milk. Top with peanut butter and any other desired toppings such as honey, maple syrup, jam, or fresh fruit. Serve immediately.

  • Do not use instant oats or steel cut oats as they alter the texture and cooking time.
