Instructions
- Freeze the Peach: Place the whole peach inside a sandwich bag and freeze it for at least a few hours or preferably overnight until it is solidly frozen.
- Prepare Yogurt Mixture: In a bowl, combine the plain yogurt with the vanilla bean paste and 1 teaspoon of honey, stirring well to incorporate the flavors evenly.
- Thaw the Peach Slightly: When ready to serve, remove the frozen peach from the freezer and allow it to thaw for a minute or two so it softens slightly but remains mostly frozen.
- Grate the Frozen Peach: Using a fine grater, such as a zester or microplane, grate the frozen peach directly over the yogurt mixture slowly. This process will take a few minutes and may make your hands cold, so be patient.
- Finish and Serve: Drizzle extra honey over the top of the peach and yogurt mixture. Optionally, sprinkle with nuts, seeds, granola, or your preferred toppings. Enjoy immediately for best texture and flavor.
