Description
This Peach Chia Pudding is a refreshing and wholesome vegan dessert or breakfast option that combines fresh ripe peaches blended with soy milk and agave, mixed with chia seeds to create a creamy, nutrient-packed pudding. Quick to prepare and requiring minimal ingredients, it’s perfect for a healthy treat with a naturally sweet peach flavor.
Ingredients
Chia Pudding Base
- 1-2 Ripe Peaches, pit removed (use 2 for more peach flavor)
- 1 cup Soy Milk or any non-dairy milk
- 2 tablespoons Blue Agave
- 4 tablespoons White Chia Seeds
Optional Topping
- 0.5-1 batch Caramelized Peaches
Instructions
- Slice the Peaches: Carefully cut the peaches along the natural crease by twisting to separate the halves and remove the pit. Then slice the peaches into thin pieces for blending.
- Add to Blender: Place the peach slices, blue agave, and soy milk into a blender. Blend until smooth, avoiding adding chia seeds at this stage to keep texture intact unless you prefer a darker blended pudding.
- Measure Out the Chia: Divide the chia seeds equally based on how many containers you will use. For example, if using two containers, put 2 tablespoons of chia seeds into each.
- Pour into Containers: Evenly distribute the peach and soy milk puree into each container slowly, so you can adjust the levels if needed.
- Add the Chia: Add the chia seeds to each container and stir thoroughly until the seeds are fully incorporated into the puree.
- Chill: Refrigerate the chia seed mixture for at least 2 hours to allow it to thicken and develop pudding-like consistency. It can also be chilled overnight.
- Eat: Serve the pudding chilled, optionally topped with caramelized peaches for added sweetness and texture, and enjoy your nutritious peach chia pudding!
Notes
- You can blend chia seeds with the puree if you prefer a smoother texture, though this will darken the pudding color.
- Use ripe, juicy peaches for the best natural sweetness and flavor.
- Caramelized peach topping is optional but adds a nice contrast in texture and sweetness.
- Feel free to swap soy milk with any plant-based milk such as almond, oat, or coconut milk.
