Instructions
- Combine dry ingredients: In a medium bowl, sift together the all-purpose flour, baking powder, and salt to ensure the ingredients are evenly mixed and free of lumps.
- Combine wet ingredients and sugar: In a blender or large bowl, add the milk, large egg, melted and cooled unsalted butter, vanilla extract, and granulated sugar. Blend or whisk the mixture for about one minute until fully combined.
- Combine wet and dry ingredients: Pour the wet mixture into the dry ingredients and gently stir until just combined. Avoid overmixing to keep the pancakes tender. Let the batter rest for about 5 minutes to allow the baking powder to activate.
- Heat cooking surface: Lightly spray a large skillet or griddle with cooking spray or melt 1 tablespoon of butter over medium heat to prevent sticking and ensure an even browning.
- Add batter to cooking surface: Ladle approximately ¼ cup of the batter onto the hot skillet per pancake. If making two pancakes, ladle separately and then distribute any remaining batter evenly between them.
