  • ¾-1 cup (150-200g) sugar, adjust to preferred sweetness
  • 3 large eggs
  • ½ cup (118ml) freshly squeezed orange juice, about 2 oranges
  • 2 tablespoons (12g) orange zest
  • 2 tablespoons (30ml) lime juice, from 1 large lime
  • 1 tablespoon (6g) lime zest


Instructions

  1. Combine Ingredients: In a large microwave-safe bowl, whisk together the butter, sugar, eggs, freshly squeezed orange juice and orange zest, along with the lime juice and lime zest until the mixture is smooth and uniformly blended.
  2. Microwave and Stir: Cook the mixture in the microwave on high power in one-minute intervals. After each interval, stir vigorously to prevent curdling and ensure even thickening. Continue this process for approximately 4 to 5 minutes, until the curd is thick enough to coat the back of a wooden spoon.
