Ingredients You'll Need

The image shows various ingredients neatly arranged on a white marbled surface. In the top left corner, there is a glass container with light brown sherry, and next to it on the right is a wooden board holding a wedge of light blue-veined cheese with a few small pieces broken off. Below this, another wooden board holds several pale cream rectangular sheets of puff pastry. To the right, a white plate holds three yellow onions with their skins on. Below the onions is a white bowl filled with dark dried figs. On the bottom left, there are small white bowls containing mustard with a smooth yellow texture, balsamic vinegar with a dark brown liquid, black pepper with coarse black specks, kosher salt which is white and fine, unsalted butter in pale yellow, and fig preserves showing a dark red-brown chunky texture. photo taken with an iphone --ar 4:5 --v 7

This Onion, Fig, and Feta Tart Recipe uses simple, everyday ingredients that come together to create a spectacular flavor profile. Each element plays a crucial role, from the rich sweetness of the onions to the fresh peppery kick of rocket leaves, turning this recipe into a visual and palate-pleasing delight.

  • Brown Onions: Essential for both the onion and balsamic jam as well as the caramelised onion topping; they develop deep, sweet flavors when cooked slowly.
  • Balsamic Vinegar: Adds a tangy sweetness that balances the savory notes.
  • Water: Used carefully to reduce and soften the onions without burning.
  • Stock Powder: Infuses both the jam and caramelised onions with a rich, savory depth.
  • Salt, Pepper, and Cumin Powder: These spices elevate the tart’s complex and warm flavor profile.
  • Olive Oil: Provides the perfect base for gentle cooking and adds subtle fruitiness.
  • Minced Garlic: Delivers aromatic complexity with every bite.
  • Fresh Figs: Sliced thin to add a burst of natural sweetness and beautiful juiciness.
  • Feta Crumbs: Brings a salty creaminess that contrasts wonderfully with the sweeter elements.
  • Fresh Rocket Leaves: Adds a peppery freshness and vibrant green color as a final touch.

How to Make Onion, Fig, and Feta Tart Recipe

Step 1: Prepare the Onion and Balsamic Jam

Start by finely chopping one brown onion to release its natural sweetness. Place it in a small pot with balsamic vinegar, water, stock powder, and the seasoning of salt, pepper, and cumin powder. Let the mixture simmer gently until half of the liquid has evaporated, then give it a quick whirl in a blender to create a smooth consistency. Return it to the stove to reduce completely until all liquid has disappeared, creating a thick, intensely flavored jam base. This step is essential for layering a rich, tangy sweetness under your tart’s other toppings.

Step 2: Caramelise the Onions

Thinly slice two brown onions into long strips and heat olive oil in a large pan. Add stock powder and minced garlic, cooking for a minute to release their aromas. Toss in the onion strips, cover them with water, and bring to a gentle boil. Season with salt and cumin powder. Let the onions simmer down for 15 to 20 minutes until they turn soft and light brown, adding more water if necessary to prevent burning. Finish with pepper and mix thoroughly. These caramelised onions add a melt-in-your-mouth sweetness and deepen the savory character of the tart.

Step 3: Assemble and Bake

Preheat your oven to 180°C. Lay your shortcrust pastry in a tart pan and spread the onion and balsamic jam evenly across the base. Top generously with the caramelised onions, followed by thin slices of fresh figs arranged with care to highlight their juiciness and beauty. Sprinkle feta crumbs liberally over the figs, creating a salty, creamy contrast. Bake the tart for about 20 minutes or until the crust is golden and the feta starts to turn a gorgeous golden brown. Once out of the oven, let the tart rest for 10 minutes—this helps the flavors settle beautifully.

How to Serve Onion, Fig, and Feta Tart Recipe

A rectangular tart with a light golden brown crust forms the base layer, filled with a thick, dark greenish spread that looks soft and chunky. On top of this spread, there are about two rows of halved figs, each showing a pinkish-red inside with tiny seeds and a slightly glossy texture. Scattered unevenly over the figs and spread are small, white crumbles of cheese, adding a rough texture. The tart is surrounded by fresh, dark green arugula leaves placed around the edges on a white marbled surface, creating a fresh contrast. Photo taken with an iphone --ar 4:5 --v 7

Garnishes

Adding fresh rocket leaves over the top just before serving brings a peppery freshness that cuts through the richness of the baked onions and feta. You can also add a drizzle of high-quality olive oil or a light sprinkle of cracked black pepper to finish with finesse.

Side Dishes

This tart pairs wonderfully with a crisp green salad tossed in lemon vinaigrette or roasted vegetables that echo the savory-sweet theme of the tart. A chilled glass of crisp white wine or sparkling water with lemon brightens the meal perfectly.

Creative Ways to Present

You can serve this tart as a centerpiece by slicing it into rustic wedges accompanied by small bowls of extra feta and fig preserves. For a more casual gathering, cut it into bite-sized appetizers garnished with rocket on individual plates for a charming finger food option.

Make Ahead and Storage

Storing Leftovers

Any leftover Onion, Fig, and Feta Tart Recipe should be cooled to room temperature, then tightly wrapped or stored in an airtight container in the refrigerator. It will stay fresh for up to 3 days, allowing you to enjoy seconds or even a quick lunch the next day.

Freezing

While this tart is best enjoyed fresh for optimum texture, you can freeze it wrapped tightly in foil and plastic wrap. Freeze for up to one month. When ready to eat, thaw overnight in the refrigerator before reheating.

Reheating

Reheat your tart in an oven preheated to 160°C for about 10-15 minutes to retain that crispy crust and warm filling. Avoid microwaving as it can make the crust soggy and the feta lose its delightful texture.

FAQs

Can I use dried figs instead of fresh in this Onion, Fig, and Feta Tart Recipe?

Dried figs can be used but will change the texture and moisture content. If using dried figs, soak them briefly in warm water to plump them up before slicing and layering on the tart.

What type of pastry works best for this tart?

A classic shortcrust pastry is ideal for this recipe because it is sturdy enough to support the toppings while providing a buttery, crumbly contrast to the soft filling.

Is this tart suitable for vegetarians?

Yes, this tart is perfect for vegetarians as it contains no meat or animal-based gelatin, relying on vegetables, cheese, and natural seasonings for its fantastic flavor.

Can I prepare the onion and balsamic jam ahead of time?

Absolutely! The jam can be made a day or two in advance and stored in the refrigerator. This actually helps deepen the flavors, making your Onion, Fig, and Feta Tart Recipe even more delicious.

How can I make this recipe vegan?

To veganize this tart, substitute the feta crumbs with a plant-based cheese alternative or use crumbled tofu seasoned with lemon juice and salt to mimic the tangy flavor.

Final Thoughts

There is something truly special about the Onion, Fig, and Feta Tart Recipe that makes it worth adding to your regular rotation. The balance of sweet, savory, and tangy flavors wrapped in a crisp, golden crust is simply unbeatable. I can’t wait for you to try it because once you do, it might just become your new favorite way to impress friends and delight your own taste buds all at once!

Description

A delightful Onion, Fig and Feta Tart combining sweet caramelized onions, tangy balsamic onion jam, fresh figs, and creamy feta cheese on a crisp shortcrust pastry base. This savory tart is enhanced with aromatic spices and fresh rocket leaves, perfect as a sophisticated appetizer or light meal.

Ingredients

Onion & Balsamic Jam

  • 1 Brown Onion, finely chopped
  • ¼ cup Balsamic Vinegar
  • 1 cup Water
  • 1 tbsp Stock Powder
  • 1 tsp Salt
  • 1 tsp Pepper
  • 1 tsp Cumin Powder

Caramelised Onions

  • 2 Brown Onions, thinly sliced into long strips
  • 2 tbsp Olive Oil
  • 1 cup Water
  • 1 tbsp Stock Powder
  • 1 tbsp Minced Garlic
  • 1 tsp Salt
  • 1 tsp Pepper
  • 1 tsp Cumin Powder

Tart Assembly

  • Shortcrust Pastry (sufficient for one 9-10 inch tart)
  • 2 Fresh Figs, thinly sliced
  • Feta Crumbs, to taste
  • Fresh Rocket Leaves, to taste

Instructions

  1. Prepare Onion & Balsamic Jam: Finely chop 1 brown onion and place it in a small pot over medium heat. Add balsamic vinegar, water, stock powder, salt, pepper, and cumin powder. Simmer gently until about half the liquid has evaporated. Transfer to a blender and blend briefly, then return to the pot to reduce the mixture completely until the liquid is fully evaporated. Remove from heat, ensuring not to burn the mixture.
  2. Caramelise the Onions: Slice 2 brown onions into thin strips. Heat olive oil in a large pan over medium heat, add stock powder and minced garlic, cooking for 1 minute. Add onion strips, water, salt, and cumin powder. Cover and bring to a boil, then let the water reduce completely over 15-20 minutes until onions are soft and light brown. Add pepper, mix well, and remove from heat.
  3. Preheat the Oven: Set your oven to 180°C (356°F) to prepare for baking the tart.
  4. Assemble the Tart: Place the shortcrust pastry in your tart tin. Spread the onion & balsamic jam evenly on the pastry base. Top with the caramelised onions. Arrange thin fig slices evenly over the onions. Generously sprinkle feta crumbs over the top.
  5. Bake the Tart: Bake in the preheated oven for 20 minutes, or until the crust is cooked through and the feta begins to turn a light golden color. Remove from the oven and allow to rest for 10 minutes.
  6. Serve: Scatter fresh rocket leaves over the tart before serving for a fresh, peppery finish.

Notes

  • Keep a close eye on the onion & balsamic jam when reducing to avoid burning.
  • If the caramelised onions are not soft after the initial reduction, add a splash more water and continue cooking.
  • Use ripe fresh figs for natural sweetness and better texture contrast.
  • Allow the tart to rest after baking to help flavors meld and make slicing easier.
  • Substitute feta with goat cheese for a different creamy tang.
