Sauce Ingredients

  • ¼ cup (60 ml) tamari or all-purpose soy sauce
  • 2 tsp sesame oil
  • ¼ cup (60 ml) hoisin sauce
  • 2 tbsp mirin

Main Ingredients

  • 1 tbsp oil (olive oil or a neutral oil)
  • 2 tsp freshly minced garlic
  • 500 g (1 lb 2 oz) minced (ground) beef
  • 250 g (9 oz) ramen noodles (or 3 x 85 g/3 oz ramen noodle packets, flavouring sachets discarded)
  • 2 cups (500 ml) water
  • 1 bunch baby bok choy, finely sliced
  • 3 cups (270 g) bean sprouts
  • 1 tbsp sesame seeds
  • Chilli oil crisp (optional)
  • 1 spring onion (scallion), finely sliced


Instructions

  1. Make the sauce – In a small bowl, combine the tamari or soy sauce, sesame oil, hoisin sauce, and mirin. Stir well until thoroughly combined and set aside.
  2. Stir-fry the beef – Heat 1 tablespoon of oil in a large, deep, heavy-based pan over medium–high heat. Add the freshly minced garlic and cook, stirring, for about 30 seconds until fragrant. Add the minced beef and cook, stirring frequently and breaking it up with a spatula or wooden spoon, for 3 to 4 minutes until the beef is browned and cooked through.
  3. Combine the sauce and beef – Pour the prepared sauce over the cooked beef in the pan. Stir well to combine and cook for 2 to 3 minutes until the sauce has slightly thickened. Push the beef mixture to the outside of the pan, leaving a space in the center.
  4. Add the noodles – Place the ramen noodles in the center space of the pan. Pour in 2 cups of water; the noodles will be about half-submerged, which is intentional. Cover the pan with a lid and cook the noodles for 1 minute.
  5. Turn and cook noodles further – Remove the lid and turn the noodles gently with tongs. Cover again and cook for another 1 minute or until the noodles are just pliable. They will finish cooking once vegetables are added.
  6. Add the veggies – Remove the lid and toss in the finely sliced baby bok choy and bean sprouts. Use tongs to combine the noodles, beef, and vegetables thoroughly. Cook while tossing for about 1 minute until the vegetables soften slightly to your liking and the noodles are cooked through.
  7. Serve – Immediately serve the dish topped with sesame seeds, optional chilli oil crisp for heat and texture, and finely sliced spring onion for freshness.

Notes

  • Use tamari for a gluten-free variation.
  • Adjust the chili oil crisp or add chili flakes for extra spice.
  • Any instant noodle packets without flavor sachets can substitute ramen noodles.
  • Ensure not to overcook the noodles - they should remain slightly firm and pliable.
  • You can add other vegetables like sliced mushrooms or grated carrots as desired.
