Instructions
- Preheat Oven and Prepare Citrus Base: Preheat your oven to 300ºF. Slice one navel orange and the lemon into thin rounds and arrange these evenly in a large baking dish to create a flavorful bed for the salmon.
- Season and Bake Salmon: Place the salmon fillet skin-side down over the arranged citrus slices. Drizzle with 2 tablespoons of olive oil, then sprinkle with 3/4 teaspoon of kosher salt and 1/4 teaspoon of cracked black pepper. Bake in the preheated oven until the salmon is opaque around the edges and cooked through, approximately 25 to 30 minutes.
- Prepare Olive-Citrus Mixture: While the salmon roasts, combine the coarsely chopped Castelvetrano olives, minced shallots or red onion, and Aleppo pepper flakes in a bowl. Zest and juice the remaining navel orange (yielding about 2 teaspoons of zest and 3 tablespoons of juice) and add to the bowl along with the remaining 1/4 cup of olive oil. Stir well to combine.
- Add Fresh Herbs and Seasoning: To the olive-citrus mixture, stir in the finely chopped fresh parsley and dill. Season with the remaining 1/4 teaspoon of kosher salt, mixing everything evenly to balance the flavors.
