Description

This No-Bake Rocky Road Pie is a decadent and creamy dessert featuring a crunchy Oreo crust, velvety chocolate cream cheese filling swirled with rich chocolate frosting, and loaded with mini marshmallows and nuts. Perfectly chilled and topped with whipped cream rosettes and extra rocky road toppings, this pie offers a delightful balance of textures and flavors without any baking required.

Ingredients

Crust

  • 1 1/2 cups Oreo crumbs (about 22 Oreos, finely crushed)
  • 5 tablespoons melted butter
  • 1/4 cup chopped nuts (peanuts or almonds, for sprinkling over the crust)

Whipped Cream

  • 2 cups heavy cream
  • 4 tablespoons powdered sugar
  • 2 teaspoons vanilla extract
  • 4 cups Cool Whip or whipped topping (2 cups for filling, 2 cups for border) – alternatively to homemade whipped cream

Filling

  • 1 tub Hershey's chocolate frosting (room temperature, reserve 1/4 cup for swirling)
  • 4 ounces cream cheese (softened)
  • 2 cups whipped cream (from above)
  • 2 tablespoons cocoa powder
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 1 1/2 cups mini marshmallows
  • Reserved 1/4 cup Hershey's frosting
  • 1/2 cup melted chocolate (cooled slightly, optional for swirl)

Loaded Rocky Road Topping

  • 1/2 cup mini marshmallows
  • 1 to 2 tablespoons chopped nuts (almonds or peanuts)
  • 1 to 2 tablespoons chocolate chips or chocolate chunks
  • Optional warm hot fudge or extra Hershey's frosting for drizzling

Instructions

  1. Make the Crust: Mix 1 1/2 cups Oreo crumbs with 5 tablespoons melted butter until the mixture resembles sandy crumbs. Press the mixture firmly into a 9-inch pie plate, making sure to push it up the sides evenly. Sprinkle 1/4 cup chopped nuts evenly over the crust in a thin layer. Place the crust in the refrigerator to chill while preparing the filling.
  2. Whip the Cream: If using homemade whipped cream, whip 2 cups heavy cream with 4 tablespoons powdered sugar and 2 teaspoons vanilla extract until stiff peaks form. Divide the whipped cream into two portions of 2 cups each—one for the filling and one for the border decoration. Spoon the border portion into a pastry bag fitted with a large star tip and chill until ready. If using Cool Whip as a substitute, measure 4 cups and divide similarly.
  3. Make the Filling: Beat 4 ounces of softened cream cheese until smooth. Gradually add the Hershey's chocolate frosting (keeping 1/4 cup reserved for swirling) and beat the mixture until it is thick and glossy. Mix in 2 tablespoons cocoa powder, 1 teaspoon vanilla extract, and a pinch of salt to enhance the chocolate flavor. Gently fold in 2 cups whipped cream until the mixture is smooth and thick, then fold in 1 1/2 cups mini marshmallows evenly.
  4. Add the Swirl and Chill: Spread the filling into the chilled Oreo crust, mounding slightly in the center. Warm the reserved 1/4 cup Hershey's frosting for 5 to 10 seconds until it becomes pourable; alternatively, use 1/2 cup melted chocolate or warm hot fudge for swirling. Drizzle this in thin ribbons over the filling, then gently fold the mixture once or twice to create swirls without overmixing. Refrigerate the pie for at least 4 hours, ideally overnight, to set properly.
  5. Pipe and Top: Using the chilled pastry bag filled with whipped cream, pipe tall rosettes or a thick swirl border around the edge of the pie. Just before serving (or up to 2 hours ahead), scatter 1/2 cup mini marshmallows over the top, then add 1 to 2 tablespoons chopped nuts and 1 to 2 tablespoons chocolate chips or chunks. For extra indulgence, drizzle warm hot fudge or extra Hershey's frosting over the topping as desired.

Notes

  • For best results, chill the pie for at least 4 hours or overnight to allow it to set firmly.
  • Use either homemade whipped cream or Cool Whip depending on your preference; Cool Whip makes the process quicker and easier.
  • Gently folding the ingredients preserves the airy texture—avoid overmixing once whipped cream is added.
  • This pie is best served cold and should be kept refrigerated until ready to serve.
  • You can vary the nuts and chocolate chunks according to your preference or availability.
