Filling

  • 14 ounces Sweetened Condensed Milk
  • 16 ounces Cream Cheese (softened & room temperature)
  • 1/3 cup Lemon Juice (about 2 large lemons)
  • 3 teaspoons Lemon zest (from 1 lemon, plus extra for garnish optional)


Instructions

  1. Prepare crust: Once the cream cheese has softened, remove the plastic covering from the graham cracker crust and set it aside for filling.
  2. Mix filling: In a medium mixing bowl, combine the softened cream cheese, sweetened condensed milk, lemon juice, and lemon zest. Using a mixer at medium speed, blend the ingredients until the mixture is smooth and creamy. Reserve some lemon zest for garnish, if desired.
  3. Fill crust: Pour the lemon cheesecake filling evenly into the prepared graham cracker crust, smoothing the top so it reaches just to the edge.
  4. Seal crust: Flip the plastic lid that came with the crust over the top to create a dome, then press the foil edges around the crust to seal it securely.
  5. Chill and set: Refrigerate the pie for at least 4 hours or until it is firm to the touch, including the center. This chilling step is essential for the filling to fully set.
  6. Slice and serve: Once set, slice the pie and serve immediately while cold. If the pie is not firm enough for clean slicing, place it in the freezer for 20 minutes or more to help it hold shape.
