Instructions
- Prepare the Mixture: In a medium bowl, use an electric mixer to beat the softened cream cheese, sugar, and vanilla extract until the mixture is smooth and creamy. Gently stir in the graham cracker crumbs until fully combined. Place the bowl in the freezer for about 30 minutes to allow the mixture to set and make it easier to roll.
- Form the Balls: Once the mixture is firm, lightly grease your hands with cooking spray to prevent sticking. Roll the cheesecake mixture into bite-sized balls. You may need to reapply the spray occasionally as the mixture can become sticky while shaping.
- Coat the Cheesecake Balls: Roll each cheesecake ball in sprinkles and gently press them in to stick. Alternatively, roll them in extra graham cracker crumbs for a crunchy coating. For a chocolate coating, melt the 12 oz. of melting chocolate with 1 teaspoon of canola oil until smooth and glossy, then dip each ball into the chocolate. Optionally, add sprinkles on top before the chocolate sets.
- Chill to Set: Place the coated cheesecake balls in a sealed container and chill in the refrigerator for at least 4 hours to allow them to firm up and develop the ideal texture. While they can be eaten immediately after preparation, chilling improves firmness.
- Storage: Store the chilled cheesecake balls in a sealed container in the refrigerator for up to 5 days. For longer storage, freeze them for up to 3 months and thaw before serving.
