Ingredients
For the Vinaigrette
- 1 tablespoon honey
- 1/8 teaspoon ground cinnamon
- Juice of half a lemon
- Pinch of salt
- 1/4 cup olive oil
For the Salad
- 1 large fresh nectarine
- 2 tablespoons salted butter
- 5 ounces fresh arugula
- 1/3 cup slivered almonds
- 3 ounces aged white cheddar cheese
Instructions
- Prepare the vinaigrette: In a large serving bowl, whisk together honey, lemon juice, ground cinnamon, and a pinch of salt. Slowly drizzle in the olive oil while continuously whisking to emulsify the dressing. Set aside to allow flavors to meld.
- Slice nectarine: Thinly slice the large fresh nectarine into approximately 14-15 slices for even caramelization and easy layering in the salad.
- Heat pan and melt butter: Preheat a large 10-inch nonstick skillet over medium heat. Add the salted butter and allow it to melt completely before adding the nectarines.
- Cook nectarine slices: Arrange the nectarine slices in a single layer in the melted butter. Let them cook undisturbed for 2 minutes to develop a caramelized surface.
- Flip and baste nectarines: Carefully flip each nectarine slice. Tilt the pan slightly and use a spoon to baste the slices with the melted butter to enhance flavor and prevent drying. Continue cooking for another 2 minutes.
- Remove nectarines and toast almonds: Remove the cooked nectarines from the pan and set aside to cool. Without scraping the pan, add the slivered almonds to toast them in the residual butter and nectarine juices until golden and fragrant.
- Assemble salad: In the bowl with the vinaigrette, add the fresh arugula, caramelized nectarines, toasted almonds, and chunks of aged white cheddar. Toss gently to combine and coat the ingredients with the dressing evenly. Serve immediately.
