Instructions

  1. Preheat the oven: Move the oven rack to the lowest position and preheat the oven to 475°F. Lightly grease a pizza stone or rimmed baking sheet with olive oil to prevent sticking.
  2. Sauté mushrooms: Heat olive oil in a large nonstick skillet over medium-high heat until shimmering. Add the sliced mushrooms and salt, stirring to coat them evenly. Let the mushrooms cook undisturbed until deeply golden brown on one side, then stir and continue cooking until all moisture is released and evaporated. Add red pepper flakes and minced garlic, sauté until fragrant (about 1 minute), then remove from heat and set aside.
  3. Prepare the pizza dough: On a lightly floured surface, press, stretch, or roll the pizza dough into a round or rectangle matching the size of your prepared pizza stone or baking sheet. Transfer the shaped dough onto the pan.
  4. Assemble the pizza: Dollop spoonfuls of ricotta evenly over the dough, leaving a one-inch border around the edges. Gently spread the ricotta with the back of a spoon. Sprinkle the shredded fontina cheese over the ricotta. Evenly distribute the sautéed mushrooms on top, then add the shredded mozzarella, and finally sprinkle with grated Parmesan cheese.
