Description

Ingredients

For the Bread:

  • 1 box yellow cake mix (15.25 oz)
  • 1 box instant pistachio pudding mix (3.4 oz)
  • 4 large eggs
  • 1 cup water
  • 1/4 cup fresh lemon juice
  • 1/2 cup vegetable oil
  • Zest of 1 lemon

For the Glaze:

  • 1 cup powdered sugar
  • 2 tablespoons lemon juice (more as needed)
  • 1 tablespoon milk or water (optional, to thin)

Instructions

  1. Preheat & prepare pan: Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line it with parchment paper to prevent sticking.
  2. Mix batter: In a large mixing bowl, combine the yellow cake mix and instant pistachio pudding mix. Add in the 4 large eggs, 1 cup water, 1/4 cup fresh lemon juice, 1/2 cup vegetable oil, and the zest of one lemon. Beat the mixture for about 2 minutes until the batter is smooth and well blended.
  3. Pour & bake: Transfer the batter into the prepared loaf pan, smoothing the top with a spatula. Bake in the preheated oven for 45 to 55 minutes. Check doneness by inserting a toothpick into the center—if it comes out clean, it's ready.
  4. Cool: Allow the bread to cool in the pan for 10 to 15 minutes. Then, carefully remove it from the pan and transfer to a wire rack to cool completely.
  5. Make glaze: While the bread is cooling, prepare the lemon glaze by whisking together 1 cup powdered sugar and 2 tablespoons lemon juice. Add 1 tablespoon milk or water if needed to achieve a pourable consistency.
