Description
This Flaugnarde of Mixed Berries is a delightful French dessert similar to clafoutis, featuring a medley of fresh blackberries, blueberries, and raspberries baked in a light, custard-like batter sweetened with agave nectar. Its soft, slightly puffed texture and subtle vanilla flavor make it an elegant yet simple treat perfect for any occasion.
Ingredients
Fruit
- 2 1/2 cups mixed fresh berries (such as blackberries, blueberries, raspberries)
Batter
- 3 large eggs
- 10 tbsp light agave nectar (or sugar)
- 1/2 cup unbleached all-purpose flour (sifted)
- 1/8 tsp salt
- 1 cup 1% milk
- 2 tsp vanilla extract
Other
- Powdered sugar for dusting
- Baking spray
Instructions
- Preheat the oven: Set your oven to 350°F to prepare for baking the flaugnarde.
- Prepare baking dish and berries: Lightly spray a baking dish with baking spray and dust it with a small amount of flour to prevent sticking. Toss the fresh mixed berries into the dish evenly.
- Make the batter: In a large bowl, whisk together the eggs, light agave nectar, salt, and sifted flour until the mixture is smooth and free of lumps. Add the milk and vanilla extract, continuing to whisk until well combined and smooth.
- Combine and bake: Pour the batter evenly over the berries in the prepared baking dish. Place the dish in the oven and bake for 45 to 50 minutes, or until the flaugnarde is lightly browned and a toothpick inserted into the center comes out clean.
- Cool the flaugnarde: Remove the dish from the oven; the custard will wiggle slightly, which is normal. Transfer to a wire rack to cool. Note that the flaugnarde will puff up during baking and then deflate as it cools.
- Serve: Once cooled, dust the flaugnarde with powdered sugar. Slice and serve as a delicious dessert or sweet breakfast option.
Notes
- Use fresh berries for the best flavor and texture; frozen berries can add extra moisture and may affect baking time.
- If you prefer a sweeter dessert, you can substitute light agave nectar with sugar or honey, adjusting sweetness to taste.
- Make sure to sift the flour to avoid lumps and ensure a smooth batter.
- The flaugnarde will wobble when freshly baked—that's normal; allow it to cool for setting.
- For a richer flavor, whole milk or cream can be used instead of 1% milk.
