Description

A vibrant and luscious Mixed Berry Coulis made from fresh or thawed berries cooked gently with sugar, lemon juice, and vanilla, then blended into a smooth, flavorful sauce perfect for drizzling over desserts or breakfast dishes.

  • 500 gr Mixed Berries (fresh or frozen, thawed & drained)
  • 50 gr Caster Sugar
  • 15 ml Lemon Juice
  • 1/2 teaspoon Vanilla Extract (optional)


Instructions

  1. Thaw Berries: If using frozen berries, place them in a large bowl at room temperature until softened and then strain to remove excess water, ensuring the coulis does not become too watery.
  2. Prepare Larger Berries: Optionally, halve or quarter larger berries such as strawberries and raspberries to speed the cooking process and promote even softening.
  3. Combine Ingredients: In a medium saucepan, combine the berries, caster sugar, lemon juice, and vanilla extract. Stir to evenly coat the fruits with sugar.
  4. Cook the Mixture: Place the saucepan over low to medium heat and cook for 15 to 20 minutes, stirring occasionally with a heat-proof spatula to prevent sticking and burning. Adjust heat as necessary to ensure gentle cooking until the fruits are very soft, mostly broken down, and the juices have thickened slightly.
  5. Cool Slightly: Transfer the cooked mixture to a heat-proof bowl or measuring jug and allow it to cool for about 10 minutes before blending.
  6. Blend the Sauce: Use an immersion blender or a regular blender to puree the compote until smooth and thick with no large chunks remaining.
  7. Strain the Coulis: Pour the blended sauce through a fine mesh sieve to remove seeds and any remaining chunks for a silky smooth texture. Repeat if desired for extra smoothness.
  8. Store the Coulis: Transfer the finished coulis into an airtight container or jar and refrigerate for up to one week, or freeze once completely cooled for longer storage.

  • Use fresh or frozen berries depending on availability; frozen berries should be fully thawed and drained before cooking.
