Description

Mississippi Chicken is a flavorful, tender slow-cooked chicken recipe made with ranch dressing mix, au jus gravy mix, butter, and tangy pepperoncini peppers. This easy, crowd-pleasing dish cooks all day in a slow cooker and is perfect served over mashed potatoes, rice, or noodles, making it a comforting and delicious meal for any occasion.

Ingredients

Chicken and Vegetables

  • 3 pounds chicken breasts
  • 1 medium onion, diced

Seasonings and Additions

  • 1 ounce packet ranch dressing mix (1 packet)
  • 1 ounce au jus gravy mix (1 packet)
  • 8 whole pepperoncini peppers (reserve the juice)
  • ¾ cup juice from the pepperoncini jar
  • ½ cup butter, sliced (1 stick)

Instructions

  1. Prepare Slow Cooker: Spray a large slow cooker with non-stick cooking spray to prevent the ingredients from sticking during cooking.
  2. Add Onion and Chicken: Spread the diced onion evenly on the bottom of the slow cooker, then place the chicken breasts on top of the onions for even flavor distribution.
  3. Season Chicken: Sprinkle the ranch dressing mix and au jus gravy mix packets evenly over the chicken breasts to infuse them with bold flavors.
  4. Add Peppers and Butter: Arrange the whole pepperoncini peppers on top of the seasoned chicken, then pour the reserved pepperoncini juice over everything. Place slices of butter evenly over the chicken to add richness and moisture.
  5. Cook: Cover the slow cooker and cook on high for 4-5 hours or on low for 6-7 hours, until the chicken is tender and easily shreds.
  6. Shred and Serve: Use two forks to shred the chicken directly in the slow cooker, mixing it with the flavorful juices, then serve hot over mashed potatoes, rice, or noodles.

Notes

  • Do not discard the pepperoncini juice as it adds essential flavor to the dish.
  • For a spicier version, add additional pepperoncini peppers or some crushed red pepper flakes.
  • Leftovers keep well refrigerated for up to 3 days and freeze well for up to 2 months.
  • This recipe is perfect for meal prep or a set-it-and-forget-it dinner.
  • If you prefer dark meat, you can substitute chicken thighs, adjusting the cooking time as needed.
