- 2 packs Annie Chun’s Yakisoba Noodle Bowls
- Basil leaves for garnish
Instructions
- Prepare the Miso Glaze: In a small bowl, whisk together the mellow white or yellow miso, rice vinegar, and honey until smooth to create a flavorful glaze for the eggplant.
- Glaze and Bake Eggplant: Spread the miso mixture evenly over the sliced eggplant rounds, then sprinkle white sesame seeds on top. Arrange the slices on a parchment-lined baking sheet and bake in the preheated oven at 375°F for 20 minutes until tender and caramelized.
- Sauté Vegetables: While the eggplant bakes, heat vegetable oil in a skillet over medium heat. Add the sliced red onion, red cabbage, and shiitake mushrooms, then sauté for about 5 minutes until the onions are tender and the vegetables are slightly softened.
- Cook Noodles: Prepare the Yakisoba noodles according to package instructions. Once cooked, toss the noodles with the included sauce packet to infuse them with savory flavor.
