Perfect for parties or anytime you want a sweet and tangy dessert, these cupcakes have a light, fluffy texture filled with whipped cream and topped with a luscious orange buttercream frosting.

Ingredients

Cupcake Batter

  • 1 cup all-purpose flour
  • 1/8 tsp baking powder
  • 1/8 tsp baking soda
  • 1/8 tsp salt
  • 2 Tbsp unsalted butter (room temperature)
  • 1/2 cup sugar
  • 3/4 Tbsp orange zest
  • 1 egg
  • 6 Tbsp heavy cream
  • 2 Tbsp freshly squeezed orange juice
  • 3/4 tsp orange extract
  • 1/2 tsp vanilla extract

Cream Filling

  • 1/2 cup heavy cream
  • 1 Tbsp confectioners' sugar

Orange Buttercream Frosting

  • 1/2 cup unsalted butter (room temperature)
  • 3 cups confectioners' sugar (sifted)
  • 1/2 tsp vanilla extract
  • 1 1/2 tsp orange extract
  • 1 Tbsp orange zest
  • 3 Tbsp freshly squeezed orange juice (strained)

Instructions

  1. Preheat and Prepare Dry Ingredients: Preheat your oven to 350°F (175°C) and line mini muffin tins with paper liners. In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt until evenly combined.
  2. Cream Butter and Sugar: In a separate mixing bowl, use an electric mixer on medium speed to cream the softened butter, sugar, and orange zest until the mixture is light and fluffy. Add the egg and mix until just incorporated to form a smooth batter base.
  3. Combine Wet and Dry Ingredients: Mix the heavy cream, freshly squeezed orange juice, orange extract, and vanilla extract in a small bowl or liquid measuring cup. Set the mixer to low speed and alternately blend in one-third of the flour mixture followed by one-third of the cream mixture, repeating the process until all ingredients are combined, being careful not to overmix.
  4. Fill Muffin Cups: Evenly divide the cupcake batter among the paper-lined mini muffin cups, filling each about three-quarters full to allow room for rising during baking.
  5. Bake the Cupcakes: Bake for 15 to 18 minutes, rotating the muffin tins halfway through baking to ensure even cooking. Check doneness by inserting a toothpick into the center of a cupcake; it should come out clean. Remove from oven and transfer the cupcakes to a wire rack to cool completely.
  6. Prepare the Cream Filling: Whip 1/2 cup of heavy cream with 1 tablespoon of confectioners' sugar until light, fluffy, and holds soft peaks. Transfer the whipped cream to a piping bag fitted with a small round tip for filling the cupcakes.
  7. Fill the Cupcakes: Once cooled, use a small round pastry tip inserted halfway down into each cupcake to carve out a portion of the cake by twisting and scooping. Fill the resulting hollow with the whipped cream filling using the piping bag.
  8. Make the Orange Buttercream Frosting: In a mixing bowl with an electric mixer, blend the softened butter, sifted confectioners' sugar, vanilla extract, and orange extract until combined. Gradually add the orange zest and freshly squeezed orange juice, beating the mixture until it is smooth and creamy. Adjust the consistency with additional confectioners' sugar or orange juice as needed. Transfer to a piping bag fitted with a pastry tip and pipe a decorative dollop onto each filled cupcake.

Notes

  • Ensure butter and cream are at room temperature for best mixing results.
  • Orange zest and juice should be freshly squeezed for the best flavor.
  • Do not overmix the batter to keep cupcakes light and fluffy.
  • Rotate the muffin tins midway through baking to promote even baking.
  • Make sure cupcakes are completely cool before filling and frosting to prevent melting.
  • Adjust the frosting consistency depending on preference by adding more confectioners' sugar (thicker) or orange juice (thinner).
