  • 4 tablespoons taco seasoning (about 1 packet)
  • 1 cup uncooked long grain rice
  • 10 ounce can Rotel tomatoes and green chilies (undrained)
  • 5 ounce can sweet corn (drained)
  • 15 ounce can black beans (rinsed and drained)
  • 1 ½ cups chicken broth
  • 3 green onions, diced
  • 3 cups shredded fiesta cheese

Instructions

  1. Heat Olive Oil: In a large skillet, preferably cast iron, heat 1 tablespoon of olive oil over medium heat until hot.
  2. Sauté Onions and Garlic: Add the diced onions and minced garlic to the skillet. Cook for 2-3 minutes, stirring often, until the onions become translucent and the garlic is fragrant but not browned.
  3. Add Main Ingredients: Stir in the cooked shredded chicken, taco seasoning, uncooked rice, undrained Rotel tomatoes and green chilies, drained corn, rinsed black beans, and chicken broth into the skillet.
  4. Combine and Boil: Gently mix all ingredients until well combined. Increase the heat to bring the mixture to a slow boil.
  5. Simmer Covered: Reduce heat to low, cover the skillet, and let it simmer for 20 minutes. Stir once halfway through to prevent sticking and ensure even cooking.
  6. Add Cheese and Green Onions: After simmering, sprinkle the diced green onions and shredded fiesta cheese evenly over the top of the mixture.
  7. Melt Cheese: Cover the skillet again and cook for an additional 5 minutes until the cheese has completely melted and the rice is tender.
