These light, airy meringue treats are piped into mushroom shapes, baked to crisp perfection, and assembled with melted chocolate to mimic real mushrooms. Ingredients
Meringue Base
- 2 large egg whites (room temperature)
- 1/2 cup granulated sugar
- 1/8 teaspoon salt
- 1/8 teaspoon cream of tartar

Instructions
- Prep: Preheat your oven to 200°F (93°C). Line a large baking sheet with parchment paper, ensuring not to use wax paper as it will not hold the meringue properly.
- Make the Meringue: In a mixing bowl, combine 2 room-temperature egg whites, 1/2 cup granulated sugar, 1/8 teaspoon salt, and 1/8 teaspoon cream of tartar. Using a whisk attachment on high speed, beat the mixture for about 7 minutes until glossy ribbons form and the peaks stay fairly stiff.
- Pipe Mushroom Shapes: Transfer the meringue mixture to a pastry bag fitted with a 3/8-inch round tip. Pipe onto the lined cookie sheet about one inch apart. For mushroom caps, pipe large dollops about 1.5 inches in diameter with a swirled tip on the side for an even top. Use a wet fingertip to smooth caps if desired. For stems, pipe slimmer, taller kisses about 3/4 inch at the base with pointed tips facing up.
- Bake: Bake the piped meringues at 200°F for 1 hour and 30 minutes. They should easily slide off the parchment paper when done. Remove from the oven and peel the parchment paper off the baking sheet. Let the meringues cool completely to room temperature on the paper; they will harden as they cool.
- Dust and Prepare for Assembly: Lightly dust both the mushroom caps and stems with cocoa powder. Optionally smudge the cocoa powder with your fingers to create a natural 'dirty' look for realism.
- Assemble Mushrooms: Using a small paring knife, gently rotate the tip in the center of each mushroom cap to create a small hole just large enough for the base tip. Melt the semi-sweet chocolate chips and transfer the melted chocolate into a ziplock bag. Snip a tiny hole at the corner and pipe chocolate into each cap’s hole. Insert the stem bases into the chocolate-filled holes, then invert the mushrooms until the chocolate hardens and sets.
- Storage: Carefully transfer the set meringue mushrooms to an airtight container. Store at room temperature for several days. Do not refrigerate to maintain crispness.
Notes
- Egg whites should be at room temperature for better volume. If rushed, place them in warm water for 15 minutes.
- Use parchment paper instead of wax paper to prevent sticking and ensure smooth removal.
- The meringues will be marshmallowy inside right out of the oven but harden as they cool.
- This recipe requires low and slow baking to achieve crisp meringue without browning.
- Do not refrigerate the finished mushrooms, as moisture can make them sticky.
- Adding cream of tartar stabilizes the egg whites for better structure.
