A flavorful Mediterranean Pasta dish combining whole wheat pasta with sautéed mushrooms, marinated artichoke hearts, sundried tomatoes, green olives, and a light white wine sauce, finished with fresh lemon zest. Perfect for a quick, vibrant, and wholesome meal in just 35 minutes.

- 6 ounces Whole Wheat Pasta, like spaghetti or angel hair
- 2 tablespoons Unsalted Butter
- 1 tablespoon Olive Oil
- 1/2 pound Mushrooms, sliced
- 3 cloves Garlic, large, minced
Flavorings & Add-ins
- 1/3 cup White Table Wine (can substitute with chicken broth or 2 tablespoons lemon juice)
- 1/2 cup Artichoke Hearts, marinated, chopped if large
- 1/4 cup Sundried Tomatoes, packed in oil, chopped
- 1/4 cup Green Olives, chopped
- Lemon Zest, for serving
- Salt, for pasta water
Instructions
- Boil Pasta: Put a large pot of water on to boil. Once boiling, add a small handful of salt and then add the whole wheat pasta. Stir occasionally and cook according to the package instructions until al dente. Drain and set aside.
- Sauté Mushrooms: While the pasta cooks, heat butter and olive oil in a large skillet over medium heat. Add sliced mushrooms and let them cook undisturbed for 5-8 minutes until they begin to brown and release their juices.
- Add Garlic and Deglaze: Stir in minced garlic and sauté for 1 minute until fragrant. Add white wine to the skillet and scrape the bottom to release any browned bits. Allow the wine to reduce for about 1 minute. (If substituting wine with chicken broth or lemon juice, do not reduce.)
- Combine Flavorings: Stir in the marinated artichoke hearts, sundried tomatoes, and chopped green olives to the skillet, mixing well to combine.
- Mix Pasta and Sauce: Add the drained pasta to the skillet and toss thoroughly to coat the pasta with the sauce evenly. Add a ladle of reserved pasta water or a bit of oil from the marinated ingredients to loosen the sauce if needed.
- Serve: Divide the pasta between two plates and sprinkle lemon zest on top for a fresh finish. Serve immediately.
