Description

Mediterranean Falafel Bowls combine crispy falafel with fresh vegetables, creamy hummus, tangy feta, and vibrant tabouli salad to create a wholesome, flavorful meal perfect for lunch or dinner. This easy, no-cook bowl comes together in just 30 minutes, delivering a healthy and satisfying Mediterranean-inspired dish.

Ingredients

Base & Spread

  • 3 to 4 tablespoons Hummus (homemade or store-bought)

Salad

  • Tabouli Salad (quantity as desired)

Falafel

  • 16 Falafels (cooked, store-bought or homemade)

Vegetables

  • 2 Medium Vine-Ripe Tomatoes, halved and sliced
  • 1 English Cucumber, halved and sliced
  • 6 Radishes, halved and sliced
  • 1/2 Medium Red Onion, thinly sliced

Cheese & Seasoning

  • 4 ounces Feta Cheese, sliced
  • Extra virgin olive oil, for drizzling
  • Sumac, optional for seasoning

Instructions

  1. Spread the Hummus: Start by placing shallow dinner bowls on your workspace. Spread about 3 to 4 tablespoons of hummus on one side of each bowl, creating a creamy base for the falafel and vegetables.
  2. Add the Tabouli Salad and Falafel: Next, spoon a generous amount of tabouli salad next to the hummus in each bowl. Then, add 3 to 4 cooked falafel patties on top or beside the salad to form the protein element of the meal.
  3. Arrange Fresh Vegetables and Cheese: Fill the remaining spaces in the bowls with sliced tomatoes, cucumbers, radishes, and thinly sliced red onion. Add the sliced feta cheese over or around the vegetables to incorporate a tangy and creamy flavor.
  4. Season and Serve: Finish each bowl with a generous drizzle of extra virgin olive oil over the ingredients. Optionally, sprinkle a dash of sumac to add a subtle citrusy and earthy seasoning. Serve immediately for best freshness and taste.

Notes

  • For the hummus, you can substitute with baba ganoush or tzatziki if preferred.
  • Falafels can be baked or fried prior to assembly depending on taste or dietary preference.
  • Tabouli can be prepared fresh using parsley, bulgur, tomatoes, mint, lemon juice, and olive oil or bought pre-made.
  • Sumac is optional but adds a nice tangy flavor that complements the Mediterranean profile.
  • This bowl can be customized with olives, pickled vegetables, or your favorite Mediterranean dips.
