  • 3 tablespoons extra virgin olive oil

  • 1/4 cup extra virgin olive oil
  • 2 tablespoons tomato paste
  • 2 cups water
  • 2 bay leaves
  • 1 teaspoon ground cumin
  • 2 teaspoons smoked paprika
  • 2 teaspoons sugar
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste


Instructions

  1. Cook the eggs: Place 5 of the eggs in a saucepan and cover them with water. Bring the water to a boil, then reduce the heat to a simmer and cook the eggs for 10 minutes. Drain the hot water and cool the eggs under running cold water or in an ice bath. Once cooled, peel the eggs and set them aside.
  2. Make the meatloaf mixture: Crack the remaining egg into a large bowl. Add the grated onion, ground beef, chopped parsley and mint, panko breadcrumbs, minced garlic, ground cumin, smoked paprika, grated Parmesan cheese, dried oregano, vinegar, and olive oil. Season generously with kosher salt and freshly ground black pepper. Gently mix all ingredients by hand until just combined. Cover and refrigerate for at least 15 minutes to let the flavors meld and to firm up the mixture for easier shaping. Preheat the oven to 375°F during this resting period.
  3. Shape the meatloaf: Prepare a rimmed baking sheet by lining it first with aluminum foil, then a same-sized sheet of parchment paper on top. Place the meat mixture onto the center and flatten it into a rectangle approximately 8 to 9 inches wide and 12 inches long.

Stir in water, bay leaves, ground cumin, smoked paprika, sugar, salt, and pepper. Bring the mixture to a boil then reduce to a simmer. Cook uncovered for about 13 minutes until the sauce thickens slightly. Adjust seasoning as needed to achieve a balanced savory, sweet, and salty flavor. Pour the sauce into an ovenproof baking dish.
  7. Finish the meatloaf in sauce: Slice the rested meatloaf into servings and place the pieces cut side down into the prepared sauce.
