Description

Maroulosalata is a fresh and vibrant Greek lettuce salad featuring crisp romaine lettuce, aromatic dill, sharp feta cheese, and a tangy lemon-olive oil dressing. This easy-to-make salad is perfect for a light appetizer or a side dish, bursting with Mediterranean flavors and ready in just 15 minutes.

Ingredients

Salad Ingredients

  • 1 head romaine (1 lb or 2 hearts romaine lettuce)
  • 5 green onions or scallions (chopped, about 2/3 cup)
  • 1 bunch fresh dill (chopped, 2-3 tablespoons)
  • 4 oz feta cheese (crumbled)

Dressing Ingredients

  • 1/3 cup extra virgin olive oil
  • 1 large lemon (juiced, about 3 tablespoons)
  • 1/4 teaspoon fine sea salt
  • 1/4 teaspoon freshly cracked black pepper

Instructions

  1. Chop the lettuce: Thinly slice your romaine lettuce. Rinse the sliced lettuce in very cold water to remove any dirt or grit, then spin dry thoroughly in a salad spinner to remove excess moisture, ensuring a crisp texture.
  2. Make the dressing: In a separate bowl or a mason jar, combine the extra virgin olive oil, freshly squeezed lemon juice, fine sea salt, and black pepper. Whisk vigorously or shake to emulsify the dressing until well blended.
  3. Assemble the salad: In a large salad bowl, combine the chopped lettuce, green onions or scallions, freshly chopped dill, and crumbled feta cheese. Toss gently to distribute the ingredients evenly.
  4. Toss with dressing: When ready to serve, drizzle all of the prepared dressing over the salad. Use tongs to thoroughly toss and massage the dressing into the salad to soften the lettuce slightly and infuse the flavors throughout. Garnish with additional dill if desired before serving.

Notes

  • For best texture, ensure the lettuce is very well dried after washing.
  • You can substitute scallions with mild red onions if preferred.
  • If you like a creamier dressing, add a teaspoon of Dijon mustard or a small amount of yogurt to the dressing.
  • This salad is best served fresh but can be refrigerated for up to 2 hours before serving.
  • Adjust lemon juice and salt to taste depending on your preference.
