Instructions
- Cook the green beans: Place the trimmed green beans in a large stockpot and cover them with water about 2 inches above the beans. Bring the water to a boil over high heat, then reduce the heat to medium and simmer the beans for 5 minutes until tender-crisp. Drain and set aside.
- Prepare the dressing: In a large bowl, whisk together the olive oil, red wine vinegar, minced garlic, Dijon mustard, kosher salt, and black pepper until well combined.
- Marinate the green beans: While the green beans are still warm, add them to the dressing along with the thinly sliced red onion. Toss everything together to coat evenly. Cover the bowl with plastic wrap and refrigerate for at least 4 hours or longer to allow the flavors to meld.
- Add fresh ingredients before serving: Just before serving, add the halved cherry tomatoes and grated Parmesan cheese to the marinated green beans. Toss gently to combine all ingredients.
